Flat Head Screws, also called Countersunk Screws, are conical with a flat outer face and a tapering inner face. An advantage to this type of screw is that very little of the head protrudes beyond the surface, allowing it to sink into the material. These screws are commonly made out of stainless steel or zinc coating.
Triangle screws are used for security reasons because they're difficult to remove without a TA screwdriver. Tri-wing screwdrivers are only compatible with a fastener head that has three slotted "wings" and a small triangular hole in the center.
This design is also used on self tapping holes in plastic. The triangle shape allows the plastic to relax back into the area between the lobes, and you end up with a much stronger hold on the lobe tips, with less stress on the plastic.
